Why do foods that are cooked, baked, or roasted smell so good?
There’s nothing quite like the smell of freshly baked cookies. They have the power to draw members from all rooms in the house to a central location. In the kitchen, fresh out of the oven, no tray of cookies is safe for long.
Or how about warm, buttered popcorn at the movie theatre? It's a totally different aroma compared to a sweet cookie, but it's hard to purchase a movie ticket and not popcorn when its buttery aroma is floating around the concession stand.
A strong aroma pulls us in. And when something smells good, we assume it's going to taste even better. But why do these types of aromas have such a strong effect on the hungry?
Cooked, baked, or roasted foods smell better because they go through a Maillard reaction. This chemical reaction is an interaction between amino acids and reducing sugars that occurs at high temperatures. Heat breaks down compounds, such as fats, creating the sweet, savory & caramelized aroma that is released into the air.
When it comes to feeding your deer, consider the power a cooked, baked, or roasted aroma has to attract you to food and think about that same effect for the deer. You’re probably going to buy that bucket of popcorn (extra butter), and you’ll find yourself attracted to the cookies just by scent alone. The same goes for deer in the woods.
